  • Total Time: 40 minutes

Instructions

  • Scrub the mussels clean with cold water, removing any beards or debris.
  • Warm the olive oil in a large pot or Dutch oven over medium heat.
  • Cook for 5 minutes, or until the vegetables are softened, before adding the garlic, onion, and carrots.
  • To the pot, add the thyme, bay leaf, chicken or vegetable broth, and water.
  • Bring to a boil, then reduce to a low heat.
  • Cook for 10 minutes, or until the vegetables are tender.
  • Cover the pot with the mussels.
  • Cook for about 5-7 minutes, or until the mussels open.
  • Any mussels that do not open should be discarded.
  • Season to taste with salt and pepper.
  • If desired, serve hot with crusty bread.
